Happy St. Patrick’s Day everyone!
Since we came here in the US this is one of the festivals that we are looking forward to. Wearing green shirts, watching parades and all green kind of festivities. This year we opt to stay at home and I just cooked corn beef just to feel the tradition.
My recipe is easy coz it will only take less than 30 minutes to prepare and cook it; simple minimal ingredients involve and nutritious.
Ingredients;
1 can Chunky Cornbeef – good source of protein
1/2 Onion chopped – helps fight infections
2 gloves of Garlic minced – good source of vitamins and minerals
6 Potatoes diced – good source of potassium
Directions:
On a hot pan place little amount of olive oil once hot enough sauté the garlic and onions. Then put on the cornbeef add 1/4 cup of water then simmer for 5 minutes. Once boiling add the potatoes and cook it for about 5 minutes or until potatoes are tender enough for you. Finally add salt and pepper to taste and serve while its hot.
This meal is best with whole wheat bread or any regular dinner rolls, for more healthy options add some steamed cabbage and enjoy!
